Chardonnay
The 2021 reserve chardonnay was sourced exclusively from silty clay soils at Kirby Vineyard in Niagara-On-The-Lake, and hand picked from 26-year old vines on September 27. The berries were fermented and aged in new (33%) and neutral (67%) French barrels for 18 months using wild yeasts before filtering and bottling in May of 2023 at 13.5% abv. The finished wine has tropical, orchard fruit and saline notes and a textured finish.

VanSickle) — The Reserve, only made in what the Kirbys, winemaker Smith and consultant Gamble believe are the best vintages with the only difference in the two Chardonnays being barrel selection. It’s slightly more generous on the nose than the estate, more integrated with yellow apples, quince, lemon meringue, stony/flinty minerality with a touch of savouriness and elegant spice notes. It has a plush, creamy texture with flint and wet stones, ripe stone fruits, some tropical mango/guava, and toasted spice notes with a layered, long and finessed finish that goes on and on. A very fine Chardonnay.
The 2021 Reserve Chardonnay is a luxurious pairing for refined dishes. Its creamy texture and bright lemon meringue notes beautifully complement tuna sashimi or sushi, while its flinty minerality adds a sophisticated contrast. For grilled octopus, the wine’s ripe stone fruit and elegant spice notes enhance the dish’s richness, and with white sauce pastas, its toasted spice and creamy finish create a perfect harmony. This Reserve Chardonnay elevates every bite with its refined elegance.
