Chardonnay
The Kirby Estate 2020 Chardonnay has tropical, orchard fruit and saline notes and a textured finish. The 2020 estate chardonnay was sourced exclusively from silty clay soils at Kirby Vineyard in Niagara-On-The-Lake, and hand picked from 26-year old vines on September 25. The berries were fermented and aged in new and neutral French barrels for 20 months using wild yeasts before filtering and bottling in July of 2022 at 13.5% abv. The finished wine has tropical, orchard fruit and saline notes and a textured finish.

“The 2020 version of this Chardonnay is more open knit and expressive from the get-go with a nose of perfumed pear, lemon-tinged citrus, ripe apple, summer peach and elegant spice notes. There is (remarkably, due to the vintage) a racy vein of salinity on the palate with a complex array of ripe, juicy orchard fruits, bergamot, integrated oak spices and plenty of finesse and flare keeping it lively through a textured finish. Our favourite pairing is with pistachio encrusted pan-fried halibut served with basmati or jasmine rice. We accompany this with a Greek yogurt based condiment infused with dill, lemon zest, lemon juice and a shot of tabasco. You can also grate cucumber into the dip for a flavour twist. The wine also pairs beautifully with skewered barbecued Argentinian shrimp.
