Chardonnay
The Kirby Estate 2019 Chardonnay has tropical, pear and saline notes. This estate chardonnay is Kirby Estate’s first chardonnay offering. Fruit was sourced exclusively from silty clay soils at Kirby Vineyard in Niagara-On-The-Lake, and hand picked from 25-year old vines on October 11. The berries were fermented and aged in new and neutral French barrels for 20 months using wild yeasts before filtering and bottling in June of 2021 at 12.9% abv. The finished wine has tropical, pear and saline notes.

It pairs beautifully with Teriyaki Salmon or any other salmon preparation. It is also one of my favorites paired with mushroom risotto with pine nuts. We prepare this dish in the steamer using 5 different mushrooms including button, cremini, shitake, enoki, and king oyster varieties, steamed in chicken stock with tarragon, butter and parmesan cheese.
